Fish Cakes:
ingredients -
1 1/2 lbs fresh filets - (porgies make great fishcakes!)
2 carrots
1 medium - large onion
5 garlic cloves
1 jalapeno pepper (remove seeds for mild cakes)
1/2 lb fresh broccoli
1/2 cup potato flakes
1/2 cup grated parmesan cheese
2 eggs
1 tbs parsley
2 tbs paprika
1/2 tsp black pepper
This recipe make approx 2 dozen cakes. Grind first 6 ingredients in food processor. Mix in eggs and potato flakes. In a separate bowl add parmesan cheese and mix in seasonings. Form fish/vegetables into hockey shaped patties. Coat with parmesan cheese mix. Place fishcakes onto cookie sheet that has been sprayed with cooking oil. Preheat oven to 325 degrees and convection bake for 45 minutes. After 30 minutes flip the fish cakes to brown evenly. Enjoy with tartar sauce or hot sauce of your choice. You can experiment and add other vegetables if you want but you may need to adjust the amount of potato flakes if the vegetables cause the mix to become more watery.
Philippe's Marinated Bluefish sashimi
This recipe will amaze you with how good it is. Try it and you will be hooked.
Cut your fresh bluefish fillets into 3/4 inch chunks and place in a tupperware type container. Add soy sauce to fully coat fish as well as ponzu sauce (approx 10% as much ponzu as soy). Add a few shakes of fish sauce and some chopped scallions. Cover and shake gently to fully coat fish. Refrigerate for 30 minutes. Enjoy! The bluefish is a similar softness as salmon sashimi and better tasting.
